The red delicious is sweet, juicy, and with significantly less acidity than the golden, which is even sweeter than the red, and just as juicy. Both types are very fleshy. This means they are best for eating raw.
But despite all that... The golden delicious has a distinctly yellow, if not ripe enough even yellow-green color. These apples are much more suitable for baking because of their acidity. Since they contain a lot of sugar, you can bake desserts with less or even no added sugar. The golden delicious is ideal for making applesauce, jellies (the red is completely useless for this). It goes very well with the taste of cinnamon. With the golden delicious it’s not a problem if you freeze it.
It is also worth adding that the golden delicious variety originated only in 1890, and by chance. The American grower Anderson H. Mullins bred the first tree, and only in 1916 did Paul Stark start proper production. Today, the golden delicious is the most widespread variety in the world.
Red apples are different. They are less suitable for pastries, because they lose almost all their flavor during baking. If you freeze them, you will lose most of their nutrients as well. Red apples are only good raw.
However, if you want to make excellent juice from apples, it is best to use both types together. Only then will you get a well-balanced and tasty apple juice.
Unfortunately, we have to add one unpleasant thing. The apple-growing industry is one of the dirtiest and most toxic in the world. For example, in December 2016 large quantities of both red and golden apples from several producers had to be withdrawn from sale in Croatia because they were found to have elevated concentrations of pesticides. It is known that even minimal amounts of pesticides are very carcinogenic and otherwise harmful to health.
To at least partially avoid pesticides, you should soak each apple in vinegar for at least 15 minutes (you can also mix 1 dcl of vinegar with 1 liter of water).
And finally, a supplement to the old saying: one raw apple a day keeps the doctor away (of course, if the apple is wholesome and pesticide-free, which is difficult to find nowadays).
