When Onion Becomes a Star: Recipe for Stuffed Onion with Meat Filling and Wine Sauce
Stuffed onion with rice, ground meat, turmeric, and thyme in wine sauce – a dish that proves it’s not just a spice, but a perfect meal for the table.
Ingredients:
- three large white onions (preferably ‘srebernjak’ variety)
- rice
- soy or ground meat
- garlic
- nutmeg, turmeric, spices ...
- broth
- mustard
Preparation:
First, prepare the filling mass for stuffing the onion. Cook the rice until three-quarters done and let it cool. Saut{-15447} the ground meat (for vegetarians, you can use soy) with onion and garlic. While saut{-15447}ing, add ground cumin, a little pepper, nutmeg, salt, a bit of turmeric ... Pour everything over with water (even better, with broth). Saut{-15447} for about 10 more minutes, and finally add finely chopped parsley.
Once the filling is ready, start on the onions. Clean the onions and put them to boil. When the water boils, cook for another 8 to 10 minutes until the onion turns translucent. Then drain and cool with cold water. When the onions are cooled, remove the outer layer (or two) which you then fill with the stuffing.
Place the stuffed onions in a saucepan with a little water and cook for another 7 minutes until the rice is fully cooked.
For the stuffed onions, you also need to prepare the sauce.
Saut{-15447} the leftover onion in fat, add a few spoonfuls of flour, and pour all together with wine. Add a bit of mustard, thyme, salt, and pepper, and continue stirring for a few minutes ... When the sauce is ready, add the stuffed onions and cook everything together for a few more minutes.
Bread dumplings are recommended to serve with this dish.
