You don't have to peel ginger with a knife. Instead, eat it with the skin on. But if that's not possible, peel the ginger with a spoon.
 
American nutritionist Dr. Kanchan Koya is considered one of the greatest experts on spices. She gained broader recognition for her theory on how spices can help overcome all diseases. Well, almost all.

Dr. Koya conducted an extensive study involving 68,000 respondents from practically all corners of the world. Among other things, one of the questions was about how the respondents peel ginger, and only 3% answered that they don't. This prompted Dr. Koya to conduct a more detailed study that surprised many.

Indeed: ginger peeled with a knife may have up to 80% fewer nutrients and medicinal ingredients than otherwise. So, what good is ginger if you throw away its most valuable components? It turns out that ginger scraped with a spoon retains only 20 to 30% fewer nutrients, which is significantly better.

Although Koya's message is to eat as much unpeeled ginger as possible, she also mentions traces of transportation, unnatural cultivation, storage in stores, in bags, etc., in her expertise.
Considering the negative impacts, peeling ginger with a spoon is still the most optimal compromise for its consumption.
