Vegetarians will probably quickly fall in love with the recipe below, although it can pleasantly brighten anyone’s day. You can serve cauliflower patties with potatoes and salad, or enjoy them as a standalone dish paired with homemade tartar sauce.

The main ingredient, of course, is cauliflower, considered one of the healthiest vegetables you can grow in your own garden. Cauliflower purifies the blood, helps with high blood pressure, aids with constipation, bladder and kidney issues, strengthens gums; its only downside is that it can cause bloating. It is rich in calcium, magnesium, potassium, beta-carotene, and vitamin C.

Ingredients:
  • 1 medium head of cauliflower
  • 2 eggs
  • 10 tablespoons flour
  • 10 tablespoons milk
  • fresh herbs to taste (oregano, parsley, thyme, etc.)
  • salt and pepper (to taste)
  • oil for frying
Preparation:

Wash the cauliflower well, dry it, and coarsely grate it to get a texture similar to grated porridge. Add the flour, milk, egg yolks, and herbs to taste. In the next step, add the stiffly beaten egg whites. Mix everything together and season with salt and pepper to taste (pepper is healthy for digestion).

When the mixture is ready, use your hands to shape small patties and fry them in hot oil.
