You really don’t need to peel ginger with a knife. Rather, eat it with the peel. If that doesn’t work for you, it’s better to peel the ginger with a spoon.
 
The American nutritionist Dr. Kanchan Koya is considered one of the foremost experts on spices. She gained wider recognition due to her theory that we can defeat all diseases with spices. Well, almost all.

Dr. Koya conducted an extensive study involving 68,000 respondents from practically all around the world. Among other questions, they were also asked how they peel ginger, and only 3% replied that they don’t peel it. This prompted Dr. Koya to carry out a more precise study, which surprised many people.

Namely: ginger peeled with a knife has up to 80% fewer nutritional and medicinal components than otherwise. So, what good is ginger if you throw the most valuable parts away? It turned out that ginger scraped with a spoon loses only 20 to 30% of its nutrients, which is significantly better.

Although Koya’s message is to eat as much unpeeled ginger as possible, in her expertise she also mentions traces of transport, unnatural production, storage in stores, in bags, etc.

Considering the negative influences, peeling ginger with a spoon is still the most optimal compromise for consuming it.

In the end, Dr. Koya also adds her concerns about ginger ground into powder. In her opinion, a spice ground into powder is meaningless. And this applies to ginger, pepper, salt, cumin...
