Carrot, Orange & Coconut Salad: The Four-Ingredient Combo That Might Just Become Your New Favorite Snack

Just four ingredients, five minutes of prep, and a serious dose of beta-carotene — this light, citrusy carrot salad is a go-to snack for anyone keeping an eye on their weight, and it comes together in the time it takes to peel a few carrots.

Sweet, crunchy, and just a little tangy, this carrot salad takes an everyday root vegetable and turns it into something you'll actually look forward to eating. It works any time of year, it's ready before your kettle's finished boiling, and the only real hazard involved is keeping your fingers clear of the grater.

Even famously health-obsessed people have had complicated relationships with carrots. Apple co-founder Steve Jobs reportedly went through phases of eating little else but carrots and apples for days at a time, and friends recalled that his skin took on a noticeably orange, sunset-like tint during those stretches, according to Walter Isaacson's biography, as reported by NBC News. It's a fun bit of trivia — and also a good reminder that with carrots, as with most foods, moderation is what actually matters. A normal-sized portion, like the one below, is nowhere near that territory.

Why Carrots, Orange, and Coconut Actually Work So Well Together

Carrots are one of the most convenient ways to work some extra plant nutrients into a snack or light lunch, and this particular combination is a nice one: it's easy to make, it keeps well, and pretty much everyone seems to enjoy it. The main thing to watch is your fingers when you get to the end of the carrot on the grater.

Carrots are well known as a source of beta-carotene, the plant compound the body can convert into vitamin A. Vitamin A is generally associated with eye, skin, and hair health, though as with most single-nutrient claims, it's the overall diet — not one salad — that makes the real difference. If you'd like the fuller picture, the Harvard T.H. Chan School of Public Health's Nutrition Source and the Cleveland Clinic both have accessible explainers on how beta-carotene works in the body. Researchers at the USDA's Agricultural Research Service have also studied how carrot variety and color affect how much beta-carotene a carrot actually delivers, if you're curious about the science behind that orange color.

Ingredients

  • 250 g carrots

  • Juice of 1 orange

  • Juice of 1 lemon

  • 2 heaping tablespoons of coconut flour

Preparation

Peel the carrots and grate them. Mix the orange and lemon juice together and pour it over the grated carrots. If you like, add some finely diced orange segments in with the carrot for extra texture. Finish by stirring in the coconut flour and mixing everything together well.

A Note on Calories

For reference, 100 grams of raw carrot generally comes in somewhere around 25–40 calories, according to standard nutrition databases such as the nutrition breakdown published by Healthline, which also covers other carrot nutrients like fiber and potassium in more detail. That makes this salad a reasonably light option even if you're watching your intake — though, as always, portion and the rest of your day's eating matter more than any single food.
