Potato milk is particularly interesting because it requires 56 times (!!) less water than almond milk—let alone oat milk. This is why many call it the most sustainable milk on the planet. That’s true even when compared to cow’s milk.
It’s earned the label of “healthiest milk” because it contains no common allergens, is lactose-free, vegan, gluten-free, low in sugar and fat, yet still high in calcium and vitamin D.
How to Make Potato Milk?
Peel the potatoes, add enough water to cover them, sprinkle in a pinch of salt, and cook thoroughly. Blend the potatoes well, then pour in the water they were cooked in. Strain everything through a cotton cloth, and, to taste, you can add a spoonful of honey or maple syrup.
Serve the milk lukewarm or chilled to room temperature.
